Sauvignon Blanc 2015

Sandy loam with pebbles, medium-low fertility. Low percentage of organic material. Good drainage and low salinity.
100% Sauvignon Blanc
Cold skin maceration for 2-4 hours within the press. The free-run must was then extracted by run-off and by pressing at a maximum pressure never surpassing 1 bar. The must was protected from air exposure. Cold settling and seeding with selected yeasts. Fermentation took place at 15 °C.
Color: Intense bright yellow.
Aroma: Very complex and delicate on the nose. Citric notes of ripen limes and green mangos.
Palate: Balanced acidity, a subtle touch of carbonic which brings crispiness to the wine.
Harsh winters and hot summers with temperate or hot days and very cold nights. The daily temperature range is about 15º C, favoring a very good production of color and tannins in the grapes.
Seafood, fish, spicy dishes, pasta, white meat, appetizers and goat cheese.
Grapes were picked and placed in 20-kilo boxes. Clusters were refrigerated prior to destemming. The harvest took place at three different degrees of ripeness: on February 4 & 27 and March 2.
